Whether served alongside piping hot rice, soft appams, or flaky Kerala parottas, this dish is a standout seafood favorite across Kerala households.
Health Benefits of Prawns
Prawns are not only delicious but also packed with nutrients. They are a low-calorie protein source, rich in essential vitamins and minerals, including selenium, vitamin B12, and iodine. The omega-3 fatty acids found in prawns can aid in heart health and reduce inflammation, making them a smart addition to a balanced diet.
Ingredients
Main Ingredients:
• Prawns / Chemmeen – 500 g (cleaned & deveined)
• Tender Coconut (Karikku) – Flesh sliced into thin pieces / bites
• Tender Coconut Water – ½ cup
• Shallots (Kunjulli) – 1 cup, thinly sliced
• Green Chillies – 3–4, slit
• Ginger – 1 tbsp, finely chopped • Garlic – 1 tbsp, finely chopped
Spice Powder & Seasoning:
• Kashmiri Chilli Powder – 1½ tbsp
• Turmeric Powder – ½ tsp
• Coriander Powder – 1 tsp
• Garam Masala / Pepper Powder – ½ tsp
• Kudampuli (Malabar Tamarind) – 1–2 pieces (soaked)
• Coconut Oil – 2–3 tbsp • Curry Leaves & Salt – As required
Preparation Method
1. Marinate the Prawns
Clean and devein the prawns thoroughly. Marinate them with ½ tsp turmeric powder, ½ tbsp Kashmiri chilli powder, a pinch of salt, and a dash of lemon juice or kudampuli water. Set aside for 15–20 minutes.
2. Prepare the Tender Coconut
Scoop out the soft flesh (karikku) from a fresh tender coconut. Cut it into thin, bite-sized slices or strips, making sure not to include any tough outer shell. Reserve ½ cup of fresh tender coconut water.
3. Sauté Aromatics
Heat coconut oil in a traditional clay pot (meen chatti) or a heavy-bottomed pan. Add curry leaves, chopped ginger, garlic, green chillies, and sliced shallots. Sauté on medium flame until the shallots turn golden brown and soft.
4. Add Spice Powders
Lower the flame and add remaining chilli powder, coriander powder, and garam masala. Sauté gently for 1–2 minutes until the spices lose their raw aroma and darken slightly.
5. Cook Prawns & Tender Coconut
Add the marinated prawns, tender coconut slices, and soaked kudampuli to the pan. Pour in ½ cup of reserved tender coconut water. Mix well, cover with a lid, and let it cook on medium-low heat for 8–10 minutes until the prawns are cooked through.
6. Roast to Perfection (Varattiyathu)
Remove the lid and increase the heat slightly. Stir continuously to reduce the liquid until the gravy coats the prawns and tender coconut slices tightly. Drizzle a spoon of fresh coconut oil and top with fresh curry leaves before taking off the heat.
Cooking Time
Cooking time for prawns depends heavily on the cooking method and size, but as a rule of thumb, prawns cook very fast—usually in 2 to 5 minutes total.
Overcooking makes them tough and rubbery, so they are done the moment they turn opaque, form a distinct “C” shape, and change to a pinkish-orange color. Prawns and Tender Coconut Roast
- Sautéing / Pan-Frying: 2–3 minutes total (1 to 1.5 minutes per side on medium-high heat).
- Simmering in Gravy / Curries: 3–5 minutes on medium-low heat. In dishes like Chemmeen Karikku Varattiyathu, prawns take roughly 8–10 minutes to gently cook through alongside the vegetables and liquid.
- Boiling / Poaching: 2–3 minutes in simmering water.
- Grilling: 2–4 minutes total (turning once halfway).
Chef’s Tip:
The subtle sweetness of the tender coconut flesh cuts through the sharp, spicy punch of the pepper and chilli masala, making every bite uniquely texturized and succulent.
Serving Suggestions
4-5 portion

- Serve hot with steamed matta rice, appams, or flaky Kerala parottas!
