Classic Louisiana Gumbo

Classic Louisiana Gumbo
Traditional Cajun Chicken, Andouille Sausage & Okra Stew
About This Dish
Classic Louisiana Gumbo is the quintessential heart of Cajun and Creole culinary tradition. Built upon a deep, chocolate-colored roux, it features the Holy Trinity of Louisiana cooking—onion, bell pepper, and celery—combined with smoky Andouille sausage, tender chicken, garlic, okra, and bold Cajun spices. Served hot over fluffy white rice, this iconic stew develops even deeper flavor as it rests.
Ingredients
1 cup all-purpose flour (for the roux)
• 1 cup vegetable oil or lard
• 1 lb Andouille sausage (sliced into ¼-inch rounds)
• 1½ lbs boneless, skinless chicken thighs (cut into bite-sized pieces)
• 1 large yellow onion, finely diced
• 1 large green bell pepper, finely diced
• 3 ribs celery, finely diced
• 5 cloves garlic, minced
• 6 cups chicken stock or broth (warm)
• 2 cups fresh or frozen sliced okra
• 1 tbsp Cajun or Creole seasoning blend
• 2 bay leaves
• 1 tsp dried thyme
• ½ tsp cayenne pepper (adjust to heat preference)
• 1 tsp Worcestershire sauce
• ½ cup green onions, sliced (for serving)
• Fresh parsley chopped, for garnish
• Gumbo Filé powder optional, for serving
• Cooked white rice for serving
Step-by-Step Instructions
1. Brown the Meat: In a large, heavy-bottomed Dutch oven or cast-iron pot, heat 1 tablespoon of oil over medium-high heat. Add the sliced Andouille sausage and brown for 5–6 minutes. Remove sausage with a slotted spoon and set aside. Season chicken pieces with 1 tsp Cajun seasoning, brown in the pan rendered fat for 5 minutes, then remove and set aside with sausage.
2. Make the Dark Roux: Reduce heat to medium. Add the remaining oil and flour to the pot. Whisk constantly for 20–30 minutes without stopping. The roux will progress from blonde to peanut butter, copper, and finally a deep dark chocolate color. Watch carefully so it does not burn.
3. Add the Holy Trinity: Once the roux reaches a dark milk-chocolate color, immediately add the diced onion, green bell pepper, and celery. Stir well—the vegetables will stop the roux from cooking further. Cook for 5–7 minutes until veggies are soft, then stir in minced garlic for 1 minute.
4. Build the Stock & Simmer: Slowly pour in the warm chicken stock while whisking continuously to prevent lumps. Add bay leaves, thyme, cayenne, Worcestershire sauce, remaining Cajun seasoning, browned sausage, and chicken.
5. Simmer & Add Okra: Bring the gumbo to a boil, then reduce heat to low and cover loosely. Simmer for 45 minutes. Stir in the sliced okra and continue simmering uncovered for another 20–30 minutes until the stew is thick and rich.
6. Finish & Serve: Remove bay leaves and skim off any excess surface oil. Taste and adjust salt and cayenne pepper. Serve piping hot ladled over a scoop of warm white rice, topped with sliced green onions, chopped parsley, and a pinch of gumbo filé powder if desired.
Chef’s Tips for Success
• Roux Patience is Key: Never leave your roux unattended or stop stirring! If black specks appear, the roux is burnt and you must discard it and start over.
• Use Warm Stock: Adding cold stock to a scorching hot roux can cause the oil to separate or splash. Ensure your chicken stock is warm before pouring it in.
• Okra & Filé Powder Usage: Okra acts as a natural thickener and flavor enhancer. If using gumbo filé powder, sprinkle it at the table or off heat—boiling filé turns the gumbo stringy.
• Better Next Day: Like many slow-cooked stews, gumbo tastes even better the next day after the complex spicy flavors have fully developed in the refrigerator. Classic Louisiana Gumbo
