Crispy Chili Oil Fried Eggs have taken breakfast and quick meals to a whole new level. By spooning savory, spicy chili crisp or chili oil into a hot pan and frying eggs directly in it, the egg whites sizzle into dangerously crispy, lacy edges while absorbing all the aromatic garlic and chili oils. Poured over warm steamed jasmine rice or crusty avocado toast, the runny yolk combines with the spicy oil to create a rich, self-saucing dish. Crispy Chili Oil Fried Eggs

•  4 large eggs (fresh, room temperature preferred)

•  2–3 tbsp crunchy chili oil / chili crisp (Lao Gan Ma or homemade)

•  1 clove garlic, thinly sliced (optional for extra aroma)

•  1 tsp soy sauce or tamari (for splash finish)

•  1 tsp toasted sesame oil

•  2 cups warm steamed Jasmine or sushi rice (for serving)

•  2 stalks green onions / scallions, thinly sliced

•  1 tsp toasted white & black sesame seeds

•  Optional Sliced avocado or fresh cucumber ribbons

1.  Heat the Chili Oil: Heat a non-stick or well-seasoned cast-iron skillet over medium heat. Add 2–3 tablespoons of chili crisp oil, spreading it evenly across the pan. If using sliced garlic, toss it in and let it sizzle for 30 seconds.

2.  Crack the Eggs: Carefully crack the eggs directly into the bubbling chili oil, spacing them apart. Lower heat slightly to medium-low so the chili bits don’t burn.

3.  Spoon Oil & Cook Whites: As the whites set, use a spoon to scoop up the hot chili oil from the edges and baste the egg whites (avoid pouring directly over the yolk if you want a bright yellow yolk). Cook for 2–3 minutes until the bottom edges turn dark golden and lacy-crisp.

4.  Splash Soy Sauce: Right before removing from heat, drizzle 1 tsp of soy sauce around the outer edges of the pan. Let it sizzle instantly into a rich glaze.

5.  Plate & Garnish: Divide warm steamed rice into two bowls. Carefully slide two crispy chili oil eggs onto each bowl along with the remaining pan juices.

6.  Finish & Serve: Drizzle with a touch of sesame oil and garnish generously with sliced green onions and toasted sesame seeds. Serve immediately while hot and runny! Crispy Chili Oil Fried Eggs

• Control the Heat: Keep heat at medium or medium-low. Chili flakes in pre-made chili crisp can scorch easily if the pan is smoking hot.
• Basting for Perfect Whites: Basting the whites with hot oil cooks them thoroughly without needing to flip the egg, preserving a glossy, liquid yolk.
• Egg Crispiness Trick: Ensure you include both the red oil and the crunchy solid bits from the bottom of your chili crunch jar into the pan for maximum texture.
• Serving Variations: Besides steamed rice, these eggs are incredible served over sourdough toast with smashed avocado, ramen noodles, or folded inside a warm breakfast taco!
