Ingredients
Method
1. Prep the Prawns
- Clean, devein, and pat dry 500 g of fresh prawns using paper towels. Season lightly with salt and black pepper.
Pat Protein Dry: Wipe meat, fish, and prawns dry with a paper towel before pan-searing to ensure a crisp crust rather than steaming the protein.
2. Melt Butter & Sauté Aromatics
- Melt 2 tbsp of unsalted butter in a wide skillet or wok over medium heat. Add the minced garlic, chopped Thai chillies, and lemongrass. Sauté for about 1 minute until fragrant, making sure the garlic does not burn.
3. Cook the Prawns
- Add the prepared prawns to the skillet in a single layer. Cook for 1 to 2 minutes on high heat until they start turning pink.
4. Add Sauces & Coconut Milk
- Lower the heat and pour in soy sauce, fish sauce, and thick coconut milk. Stir gently to combine all ingredients and let the sauce simmer for 2–3minutes until the prawns are cooked through and tender.
5. Finish & Garnish
- Turn off the heat and stir in fresh lime juice and torn Thai basil or coriander leaves. Serve hot immediately.
